Põhjaka Plum eau-de-vie is made from honest Estonian raw materials. We use three types of ripe, domestic plums in the fermentation of our wine – there are sweet plums as well as bitter and drier plums.
From these plums, we make a wine that is vinified in several stages over a few months – starting with natural yeast, then finishing with cultured yeast. After the fermentation is complete, we allow the wine to ‘settle’.
The resulting wine, dark and full of flavour, is distilled 2 times in our own copper still, resulting in an aromatic eau-de-vie. Põhjaka Plum eau-de-vie has a fruity aroma, with a sweetness on the palate, as well as a plum skin shape and bitterness.
It is suitable to be enjoyed in an aromatic glass and at room temperature. For the more adventurous, a small splash of lemon juice is recommended, as it brings out a whole new side of the drink.
